If you’ve been seeing this kind of stuff all over Instagram and wondering “do people actually do this?”… now we can find out locally and I bet it feels gooood.

A bakery in Troy that’s quietly becoming “that place”
I’m not exaggerating when I say this… if you like bread even a little bit, this might be worth the drive.

Bricklayer Bakery & Cafe in Troy is one of those places you don’t really find, you hear about it from someone and then wonder how you missed it.
So… consider this me telling you.
It actually started during the pandemic when the owner got tired of a long commute and started baking sourdough. That turned into selling at the Lake St. Louis Farmers Market… which turned into selling out regularly… which eventually turned into opening a small bakery space in Troy.
And now it’s one of those spots where people walk in for bread and somehow end up staying longer than they planned.
The first thing people notice is the smell (which feels obvious but still worth saying 😄). Fresh bread, pastries, all of it. But what makes it stand out is that it’s not just a bakery, it’s also a little deli.
So you can grab:
a stacked sandwich on fresh baked bread
a breakfast sandwich (their bodega-style one is a regular sellout)
or just go straight for pastries and cookies

Everything leans simple, fresh, and made in-house. Even the menu changes pretty regularly depending on what they’re baking and what’s in season
And the bread… that’s kind of the whole thing.
They do sourdough loaves, buns, and other staples, and from what I’ve heard, they don’t always make it through the day. It’s one of those “get there early or hope you get lucky” situations.

But honestly, the part I like most is the feel of the place.
It’s small. It’s local. People know each other. Conversations just kind of happen while you’re waiting. It doesn’t feel like a “grab your food and leave” spot—it feels like a place we’ve all been missing out on for a while.
If you’ve been wanting something a little different than the usual fast food or chain spots, and you don’t mind a short drive, this one’s worth checking out.
